“L’Echarderie”

Our plots of Chaume 1er Cru surround the place called "L’Echarderie", which used to be, until the French revolution, the cellar of the lords of Haute-Guerche (who were farming the Chaume vineyards on behalf of the Ronceray Abbey).
The marriage of schists and puddingstones in the soils gives this cuvée a mineral complexity and a slight bitterness on the palate.
